Thanksgiving...is it here?

Who else LOVES Thanksgiving food?? I know I do, to the point where I almost can’t wait. Instead of making a full-blown Thanksgiving feast, here are some ideas to make your favorite dishes in a single serving. A sneak peek at what’s on the menu this year, with no waste! Use your favorite fandom mugs to enjoy your delicious creations!


Pumpkin Pie in a Mug

Ingredients:
2 Tbsp of crushed graham crackers
⅓ cup pumpkin puree
1 egg
1 Tbsp milk
2 Tbsp brown sugar
1 Tsp pumpkin pie spice (can be substituted with cinnamon)
½ Tsp vanilla
1 pinch of salt

 Steps:
1. In a small bowl, whisk together the pumpkin puree, egg, milk, brown sugar, pumpkin pie spice, salt and vanilla extract until there are no lumps.
2. To the bottom of a microwavable mug add your crushed cookies.
3. Pour your pumpkin pie mix on top.
4. Microwave roughly 1½ -2 minutes, checking every 30 seconds. The top may look slightly damp but it will set as it cools. Cooking time is based on my 1200W microwave so your timing might vary.
5. Carefully remove the mug from the microwave. Let it stand for a couple minutes to cool. Serve with whipped cream and Enjoy otherwise place in the fridge for up to 24 hours. Enjoy!


Thanksgiving Egg Mug

Ingredients:
3/4 cup liquid egg substitute
1/4 cup dry stove top stuffing mix (your choice of flavor)
1 Tbsp minced onion
1 Tbsp dried craisins
1 Tbsp fat free turkey gravy
1 oz cooked and chopped chicken breast (or lean chopped turkey)
salt and pepper to taste

Steps:
1. Microwave the stuffing with 2 Tablespoons of water for 1 minute and 30 seconds.
2. Spray a large mug with non-stick spray. Combine egg, minced onion, salt and pepper. Microwave for 1 minute.
3. Stir in the craisins and chicken or turkey. Microwave for another 1 minute and 30 secs or until set. (May need to add some extra minutes...depends on your microwave).
4. Stir in your stuffing and top with gravy. Enjoy!
